If you already work in a hospitality environment, this option enables you to gain a qualification by undertaking much of your study at work.
You, your employer and Ara will enter into a training agreement which provides an individual training plan with regular feedback as you progress through the programme. You'll receive on-job training and coaching from your employer and our industry training professionals. You'll also gain knowledge and practical skills within our training kitchens at Ara. Then you'll be able to showcase your skills through practical, on-the-job assessment opportunities.
The course covers the skills required to create a wide range of complex dishes, from hot meals to desserts and pastries. You'll learn about preparation and presentation techniques, food safety, health and safety, operating policies of commercial kitchens and communication practices between colleagues, managers and customers.
This programme is also available as a full-time study option.
To meet Health and Safety requirements, applicants must be physically able to undertake the practical components of the programme in an industry emulated environment.
Please note: TTAF funding is no longer available for this study option, however, we encourage you to explore if you're eligible for Fees-Free study. More information is available here.
Please also note: A Greymouth intake of this programme - delivered by Ara | Te Pukenga using the training kitchens at Tai Poutini | Te Pukenga - is available. To apply, click on the View Dates & Apply button on this page and select the Greymouth option.
This qualification will give you the skills to work as an intermediate-level chef in a professional kitchen.
