If you aspire to a career in cookery, give yourself the edge over your peers by completing this course! With a strong focus on food hygiene and safety, you will gain the essential, foundation knowledge that will be relevant throughout your career. You'll learn about safe food handling and hygienic practices for food safety, as well as cover the skills and knowledge needed to incorporate safe work practices into workplace activities.

You will get hands-on experience in using food preparation equipment, including safety and cleaning, and learn a range of cookery techniques and cook-chill skills. During the course, you will learn all about catering operations, including a sound knowledge of kitchen operations on preparing food items.

This 22-week course will also give you the chance to apply your knowledge and skills by preparing and presenting some simple dishes using some basic methods of cookery!

This course is the ideal introduction for anyone considering work in a commercial kitchen in a hospital, aged care facility, airport, sporting/entertainment venue, or mobile catering business. It is also an ideal stepping stone to undertake a cookery qualification.

This course is delivered on campus from 9am to 3.30pm. It also includes some online learning that needs to be completed outside these hours. There may be work placement (subject to satisfactory progress through the course) to be undertaken as well as some services periods timetabled outside of the course delivery hours.

Upon successful completion of this qualification, you wish to continue your studies and undertake SIT30816 - Certificate III in Commercial Cookery.
